Now off to cook the seafood Gumbo for Christmas dinner (and no, I'm not joking!) :)

Any chance of the recipe? I've been trying to get a decent gumbo recipe for years. All the ones I've found in the past take 9 hours to make or are awful. :?

The secret is making a good brown roux.

I'll post the recipe later
